Well, we got the call we have been mostly expecting, but a little dreading...Loren's biopsy came back consistent with Celiac Disease. We meet with the dietitian on Tuesday, and then I guess it's goodbye goldfish, mac n cheese, pizza and animal crackers (just to name a few of her favorites)...hello corn pasta, rice flour, and whatever else gluten free I can find (I did already find gluten free waffles on sale at HEB the other day and bought those)!

I used to do a lot of research around Celiac disease and food for work, and I think you'll find that there are a wealth of Gluten Free foods available. It has been identified as one of the next big trends in food (similar to the low-carb craze, Organic, etc.) so many food companies are focusing on increasing their Gluten free offerings, or just calling out that their foods are in fact already Gluten Free.
