Brussel Sprouts

So I know the first thought that comes to your mind is eewwww....right?
But let me tell you to give this little veggie a second try. I decided a few weeks ago I would try them...after not tasting one in probably 15 years. So I found a recipe, and they are now part of our regular veggie rotation.
Loren loves them...and yells for brussel sprouts when we go grocery shopping, and then cannot wait for me to make them.
So here is the recipe...sooo easy and yummy too:

Roasted Brussel Sprouts

1-2 lb brussel sprouts (fresh)
olive oil
salt and pepper

Cut stem from brussel sprouts and discard any loose leaves. Put them on a baking sheet and drizzle with olive oil, sprinkle with plenty of salt (I use kosher) and pepper. Toss around to evenly coat.
Bake at 400 for 35-45 min., tossing around every 15 minutes to evenly roast. They will be dark brown/almost black when they are done.

Yummy! I love brussel sprouts. I like to toss mine with bacon before serving.Bacon makes everything taste good. ;0

Thanks for this recipe...I'm finally going to use it tonight! I'll let you know how my little squirts like it...not counting on it but praying for a miracle! :) I might take Laura's suggestion since we love bacon but we'll see how time allows for an extra step.
