It was about 1 year ago that we found out that Loren had Celiac Disease, and we embarked on a gluten free diet for her. Yesterday she had her one year checkup with her new pediatric gastroenterologist here in Houston. We really liked him! Best of all, he said she looked good..and he opted not to do blood work...mainly because she is healthy, and we are doing everything we can to ensure she is 100% gluten free. Even if the test showed otherwise, I don't know what we could do better...aside from possibly cutting out all food we didn't prepare (not ready to do that yet...we love going out to eat!).
We have learned so much over the last year...and all in all...it's not that bad. It is sad when she sees things that look so yummy and are not gluten free (think yummy cakes, cookies and cupcakes), or when all the other kids are eating something she cannot. But she handles it quite well and we are finding more and more yummy treats for her. I found out that one of our mentor moms at MOPS is a recently diagnosed Celiac, so that's been a blessing for us both to bounce ideas, share recipes and stuff. She recently found a company out of Colorado that makes many good things...so we just placed a big order and we are looking forward to that coming in soon...Loren is anxiously awaiting the graham crackers, dinner rolls, and snickerdoodles. She is also a much better GF baker than I am (not that I have tried a lot), so she is so sweet to bring over big pieces of carrot cake and yesterday, berry bread pudding for Loren!
So..we are thankful she is well...and thankful for all the people out there ensuring there are gluten free options that are GOOD!
